Creamy Miso Mushroom Pasta

Umami-packed creamy miso mushroom pasta ready in 30 minutes for a perfect weeknight meal.
Ingredients:
  • 1 pound spaghetti, fettuccine, or pasta of choice
  • Salt, for the pasta water
  • 1 tablespoon olive oil
  • 6 ounces cremini mushrooms, sliced
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1/3 cup freshly grated Parmesan cheese
  • 2 tablespoons white miso paste
  • Optional: Fresh sage, parsley, or thyme, for garnish
Instructions:
  • Prepare the pasta: Boil generously salted water in a large pot. Add the pasta and cook following package instructions. Save a cup of pasta water, then drain the pasta in a colander. Rest the colander on the pot to keep it warm.
  • Sauté the mushrooms in olive oil until golden, about 5 to 8 minutes, then transfer to a bowl or the pasta pot.
  • Prepare the sauce: Rinse and dry the skillet used to cook the mushrooms, then return it to the stove over medium heat. Melt the butter in the skillet. Saute the garlic until fragrant, for about 2 minutes. Mix in the Parmesan, miso, and 1/2 cup of reserved pasta water. Stir until the cheese is melted and all ingredients are well combined, for 2 to 4 minutes.
  • Combine the sauce with the pasta and mushrooms in the pot, tossing until the pasta is fully coated. Adjust sauce thickness with pasta water as needed. Optionally, garnish with fresh herbs. Serve immediately and refrigerate any leftovers in a sealed container for up to 3 days. Enjoy and don't forget to leave a rating if you loved it!
