Creamy mushroom fettuccine with wine sauce - restaurant quality taste in a simple family favorite recipe.
Ingredients:
  • 1 (12 ounce) package dry fettuccine noodles
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 fresh mushrooms, sliced
  • 1 cup chicken stock
  • 0.5 cup white wine
  • 1 tablespoon minced garlic
  • 1 tablespoon Italian seasoning
  • 0.5 cup sour cream
  • 1 tablespoon cornstarch
  • 0.25 cup grated Parmesan cheese for topping
Instructions:
  • Fill a large pot with salted water and bring to a rolling boil. Add fettuccine and olive oil. Boil for about 8 minutes until pasta is al dente. Drain.
  • In a skillet, gently melt butter over low heat. Add mushrooms and sauté until tender and rich. Stir in stock, white wine, garlic, Italian seasoning, and salt. Increase heat to medium-high and cook, stirring continuously, for approximately 5 minutes.
  • Lower the heat and blend in the sour cream until silky. Add cornstarch and let it thicken by simmering for about a minute. Serve over fettuccine or toss with pasta. Sprinkle with Parmesan cheese before serving.
