Creamy mushroom pasta in 30 minutes, no tomato sauce.
Ingredients:
  • 0.5 (16 ounce) package linguine pasta
  • 3 tablespoons unsalted butter, or more as needed
  • 2 cups sliced cremini mushrooms
  • 0.5 cup diced onion
  • 2 cloves minced garlic
  • 1 tablespoon all-purpose flour, or more as needed
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 0.75 cup heavy cream
  • 2 1/2 tablespoons spreadable cheese with cracked pepper (such as Boursin)
  • 0.5 teaspoon ground nutmeg, or to taste
Instructions:
  • Bring a pot of salted water to a boil. Cook linguine for 11 minutes until al dente. Reserve 1 cup of pasta water for sauce. Drain.
  • Heat butter in a saucepan over medium heat. Saute mushrooms, onion, and garlic until soft for about 5 minutes. Bring to a simmer over medium-high heat and stir in flour to remove any lumps. Season with salt and pepper, then stir in cream, cheese, and nutmeg. Simmer on medium-low heat until thickened, stirring every 5 minutes to prevent sticking. Add more butter if needed.
  • Combine the cooked pasta with reserved pasta water, adding splashes as necessary to achieve your ideal sauce thickness.
