Creamy mushroom soup

Indulge in this classic, earthy cream of mushroom soup bursting with rich flavors.
Ingredients:
600 g mixed mushrooms
1onion
2sticks of celery
3cloves of garlic
a few sprigs of fresh flat-leaf parsley
a few sprigs of fresh thyme
olive oil
1.5 litres organic chicken or vegetable stock
75 ml single cream
6slices of ciabatta
extra virgin olive oil
Instructions:
Clean the mushrooms and slice them finely. Finely slice the onion, celery, and garlic. Chop the parsley stalks and pick the thyme leaves. Heat olive oil in a large saucepan and add the vegetables and mushrooms. Cook until softened. Reserve 4 tablespoons of mushrooms. Add stock and simmer for 15 minutes. Season with salt and pepper, then blend until smooth. Stir in cream and bring to a boil. Toast the ciabatta and top with reserved mushrooms. Serve the soup garnished with parsley and remaining mushrooms, along with ciabatta crostini.
