Creamy mushroom soup: Easy and delicious with fresh mushrooms.
Ingredients:
  • 0.25 cup butter
  • 1 cup chopped shiitake mushrooms
  • 1 cup chopped portobello mushrooms
  • 2 shallots, chopped
  • 2 tablespoons all-purpose flour
  • 1 (14.5 ounce) can chicken broth
  • 1 cup half-and-half
  • 1 pinch ground cinnamon
Instructions:
  • In a large saucepan over medium-high heat, melt the butter until it sizzles. Add the shiitake mushrooms, portobello mushrooms, and shallots, sauté until soft, about 5 minutes. Whisk in the flour until it forms a smooth paste. Slowly pour in the chicken broth while stirring constantly. Cook and stir for another 5 minutes until the mixture thickens and bubbles.
  • Gently incorporate the half-and-half, season generously with salt and pepper, and delicately dust with cinnamon. Warm gently until heated through, being careful not to reach a boiling point.
