Creamy mushroom soup

Indulge in a cozy winter favorite: Creamy Mushroom Soup.
Ingredients:
  • 1 large brown onion, chopped
  • 500g sebago potatoes, peeled, chopped
  • 500g cup mushrooms, sliced
  • 200g Swiss brown mushrooms, sliced
  • 1 litre chicken style liquid stock
  • 126.25 gm pure cream
  • 2 tsp fresh thyme leaves
Instructions:
  • In a large saucepan over medium-high heat, sauté onion and garlic in oil for 3 minutes until onion softens. Stir in mushrooms and potato and cook for an additional 5 minutes.
  • Pour in the stock and generously season with pepper. Cover the pot and bring it to a boil. Lower the heat to medium-low and let it simmer for 15 to 20 minutes until the potatoes are tender. Allow it to cool slightly for 5 minutes before serving.
  • In batches, thoroughly blend until smooth. Return to pan on low heat. Stir in pure cream and thyme. Cook and stir for 2 minutes, until heated through. Serve.
