Creamy mushroom soup

Whip up a savory mushroom soup with just a handful of simple ingredients.
Ingredients:
  • 25g butter
  • 1 medium brown onion, thinly sliced
  • 1 medium leek, trimmed, halved, washed, thinly sliced
  • 500g cup mushrooms, thinly sliced
  • 510.00 gm chicken style liquid stock
  • 126.25 gm pure cream
  • Pure cream, to serve
  • Chopped fresh chives, to serve
Instructions:
  • In a saucepan over medium heat, melt butter until it shimmers. Add onion and leek, and stir for 5 to 7 minutes until softened. Add mushroom and cook for another 5 to 7 minutes until the mushroom is soft.
  • Pour in the savory stock, allowing the liquid to come to a rapid boil. Lower the heat to a medium setting and let it simmer for 10 minutes, or until the mushrooms are tender and the liquid has slightly reduced. Puree the soup in batches until it's luxuriously smooth.
  • Pour the soup back into the pan and season with salt and pepper. Stir in the cream and lower the heat to cook for 5 minutes, or until heated through. Serve the soup into bowls and garnish with a dollop of cream and fresh chives before serving.
