Creamy mushroom soup

Savory and affordable mushroom soup recipe.
Ingredients:
  • 25g butter
  • 1 onion, sliced
  • 400g field mushrooms, roughly chopped
  • 2 garlic cloves, crushed
  • 750ml beef stock
  • 250ml water
  • 250ml cream
  • 40.00 ml chopped parsley
  • salt and cracked black pepper
  • Crispy croutons, to serve
Instructions:
  • In a large saucepan over medium heat, melt the butter until it sizzles. Sauté the onion for 2-3 minutes until fragrant. Then add the mushrooms and cook for an additional 5 minutes, stirring occasionally.
  • Stir in the garlic and cook for 2 minutes. Pour in the stock and water and simmer for 35 minutes, or until the mushrooms are very tender.
  • Take the pan off the heat and use a hand blender to process the mixture until it's nearly smooth. Put the pan back on the heat and stir in the cream, chopped parsley, salt, and pepper.
  • Serve the soup in bowls garnished with crispy croutons.
