Creamy mushroom soup

Savory and affordable mushroom soup recipe.
Ingredients:
25g butter
1onion, sliced
400g field mushrooms, roughly chopped
2garliccloves, crushed
750ml beef stock
250ml water
250ml cream
40.00 ml choppedparsley
salt and cracked black pepper
Crispy croutons, to serve
Instructions:
In a large saucepan over medium heat, melt the butter until it sizzles. Sauté the onion for 2-3 minutes until fragrant. Then add the mushrooms and cook for an additional 5 minutes, stirring occasionally.
Stir in the garlic and cook for 2 minutes. Pour in the stock and water and simmer for 35 minutes, or until the mushrooms are very tender.
Take the pan off the heat and use a hand blender to process the mixture until it's nearly smooth. Put the pan back on the heat and stir in the cream, chopped parsley, salt, and pepper.
Serve the soup in bowls garnished with crispy croutons.
