Quick and delicious microwave side dish.
Ingredients:
  • salt and pepper to taste
  • 1 spaghetti squash
  • 0.5 cup butter
  • 0.5 onion, chopped
  • 1 teaspoon minced garlic
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 cup sour cream
Instructions:
  • Using a knife, pierce the spaghetti squash all over. Microwave the squash on high for about 12 minutes until fork tender. Meanwhile, melt butter in a skillet over medium heat. Sauté onion and garlic until soft. Stir in cream of mushroom and sour cream until well combined. Season with salt and pepper, then keep warm on low heat.
  • Take out the spaghetti squash from the microwave and allow it to cool briefly. Using a towel or potholder for grip, slice the squash lengthwise, remove the seeds with a spoon, and use a fork to scrape the flesh into a bowl. Add the mushroom mixture from the saucepan, and combine well.
