Indulge in creamy mashed parsnips, a vitamin-rich alternative to carrots, perfect for roasting or boiling.
Ingredients:
  • 1kg parsnips, peeled, trimmed
  • 300ml cream
Instructions:
  • Cut the parsnips in half lengthwise, remove the cores, and then chop them into 4cm pieces.
  • In a saucepan, add parsnips and cover with cold water. Bring to a boil over high heat, then reduce to medium heat and simmer for 15 minutes until just tender. Drain and enjoy!
  • Place the parsnips back in the saucepan over low heat. Gently shake the pan until all the water has evaporated. Stir in the cream, salt, and pepper. Cook on low heat for 15 minutes until a smooth mash forms. Adjust seasoning with salt and pepper to taste. Serve hot.
