Creamy parsnip mash baked to perfection with butter, cream, and sherry - a delectable and effortless side dish.
Ingredients:
  • 3 pounds parsnips, peeled and cut into 1/2-inch pieces
  • 0.25 pound butter, melted
  • 0.25 cup sherry
  • 0.25 cup heavy whipping cream
  • 1 teaspoon white sugar
  • 0.25 cup bread crumbs, or to taste
  • 2 tablespoons butter, cut into small pieces, or more to taste
Instructions:
  • In a large pot, cover parsnips with water and bring to a boil. Simmer on medium-low heat until tender, about 20 to 30 minutes. Drain and let cool slightly before using.
  • Preheat oven to 350°F (175°C).
  • In a bowl, combine parsnips, melted butter, sherry, heavy whipping cream, salt, and white sugar until smooth. Transfer the mixture to a baking dish, sprinkle with bread crumbs, and dot with butter pieces.
  • Bake until golden brown, about 25 to 30 minutes in the preheated oven.
