Indulgent twice-baked mashed potatoes, a delicious side dish that pairs perfectly with chicken, BBQ ribs, or beef.
Ingredients:
  • 6 Yukon Gold potatoes, peeled
  • 0.25 cup butter, softened
  • 0.5 cup sour cream
  • 0.5 (8 ounce) package cream cheese, softened
  • 3 cups shredded Cheddar-Monterey Jack cheese blend
  • 2 tablespoons butter, cut into small pieces
  • 1 tablespoon bacon bits, or more to taste
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • In a large pot, boil potatoes covered with salted water until tender, about 20-25 minutes. Drain and transfer to a large bowl.
  • Combine 1/4 cup butter with mashed potatoes until smooth. Blend in sour cream and cream cheese, then add 2 cups Cheddar-Monterey Jack cheese. Transfer mixture to a 9x13-inch baking dish. Top with 1 cup cheese, 2 tablespoons butter, and bacon bits.
  • Bake until bubbly, cheese is melted, and edges are crispy, 20-25 minutes in the preheated oven.
