Creamy cauliflower mash with a decadent blend of cheeses - a delicious low-carb alternative to mashed potatoes.
Ingredients:
  • 1 large head cauliflower, cut into florets with stems cut into bite-size pieces
  • 1 cup shredded Cheddar cheese, divided
  • 0.5 cup reduced-fat sour cream
  • 4 ounces reduced-fat cream cheese, softened
  • 0.25 cup grated Parmesan cheese
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C).
  • 1. Set up a steamer insert in a saucepan, ensuring the water level is just below the steamer. 2. Bring the water to a boil. 3. Add the cauliflower, cover, and steam until very tender, approximately 5 minutes.
  • Place the cauliflower in a bowl and mash it with a potato masher until slightly chunky. Add 1/2 cup Cheddar cheese, sour cream, cream cheese, and Parmesan cheese, mixing well. Spread the mixture into an 8-inch square casserole dish and sprinkle the remaining Cheddar cheese on top. Cover the dish with aluminum foil or a lid.
  • Bake in a hot oven until bubbly, around 20-25 minutes. Uncover and bake until the top is golden brown, approximately 10 more minutes.
