Kid-approved mashed cauliflower with bacon, chives, and cheese - a tasty veggie twist on classic comfort food!
Ingredients:
  • cooking spray
  • 2 (20 ounce) bags frozen cauliflower
  • 0.25 cup sour cream
  • 0.25 cup plain yogurt
  • 1 tablespoon salted butter, softened
  • 1 cup shredded Cheddar cheese, divided
  • 2 tablespoons bacon bits
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon minced garlic
  • 0.5 teaspoon black pepper
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C), then generously grease a large square baking dish with cooking spray.
  • Place the cauliflower in a microwave-safe bowl and microwave until tender, approximately 6 minutes.
  • Puree cauliflower in a food processor until creamy. Mix in sour cream, yogurt, and butter until smooth.
  • Combine the blended cauliflower mixture with 3/4 cup of Cheddar cheese, bacon bits, chives, garlic, and black pepper in a bowl. Spread the mixture into the prepared baking dish and sprinkle the remaining Cheddar cheese on top.
  • Bake on the middle rack in preheated oven until cheese is melted, around 15 minutes. Broil until the top is golden brown, 3 to 5 minutes.
