Low-Carb, Twice-Baked Cauliflower Casserole

Try a delicious low-carb, casserole-style take on classic twice-baked potatoes.
Ingredients:
  • 1 large head cauliflower, chopped
  • 1.5 cups shredded reduced-fat Cheddar cheese
  • 0.5 cup bacon bits (such as Hormel®)
  • 0.5 (8 ounce) package low-fat cream cheese
  • 0.5 cup low-fat sour cream
  • 0.25 cup minced green onions
Instructions:
  • Assemble all the ingredients.
  • Preheat the oven to 350°F (175°C) for a perfectly heated cooking environment.
  • 1. Boil a large saucepan of water. Add cauliflower and cook until tender yet still slightly firm, for 3 to 5 minutes.
  • After draining well, place cauliflower in a large bowl. Use a potato masher to create a mashed cauliflower mixture with some chunks remaining.
  • Set aside 1/2 cup of Cheddar cheese and 1 tablespoon of bacon bits. Combine the rest of the Cheddar cheese, remaining bacon bits, cream cheese, sour cream, green onions, butter, salt, and pepper with the mashed cauliflower in the bowl.
  • Pour the mixture into an 8-inch square baking dish. Sprinkle the remaining Cheddar cheese and bacon bits over the top. Bake in the preheated oven until hot and bubbly, about 30-35 minutes.
