Easy make-ahead cheesy stuffed potatoes for a stress-free meal prep!
Ingredients:
  • 4 medium desiree potatoes
  • 3 shortcut bacon rashers, rind removed, finely chopped
  • 58.75 gm sour cream
  • 82.50 ml grated cheddar
  • 2 green onions, thinly sliced
Instructions:
  • Preheat the oven to 180C/160C fan-forced. Place the potatoes on a baking tray, drizzle with oil, and season. Bake for 1 hour until tender. Add bacon to the tray for the last 15 minutes of cooking. Let it cool. Increase oven temperature to 220C/200C fan-forced.
  • Cut the potatoes in half lengthways, and scoop out the centers to create 1cm-thick shells. Place the potato flesh in a bowl, season, and mash with a fork. Stir in the sour cream, half of the cheese, bacon, and onion. Spoon the filling into the potato shells, and sprinkle with the remaining cheese and bacon.
  • Place the potatoes on a wire rack over a baking paper-lined tray. Bake for 15-20 minutes until heated through, then sprinkle with the rest of the onion.
