Indulge in homemade twice baked potatoes - cheesy, gooey, and easy to make ahead for a quick and satisfying meal at home.
Ingredients:
  • 4 large unpeeled Idaho or russet baking potatoes (8 to 10 oz each)
  • 1/4 to 1/2 cup milk
  • 1/4 cup butter, softened
  • 1/4 teaspoon salt
  • Dash pepper
  • 1 cup shredded Cheddar cheese (4 oz)
  • 1 tablespoon chopped fresh chives
Instructions:
  • Preheat the oven to 375°F. Gently scrub the potatoes without peeling them. Using a fork, pierce the potatoes several times to ensure steam can escape during baking.
  • Bake for 1 to 1 1/4 hours, or until potatoes are easily pierced with a fork in the center.
  • Once the potatoes have cooled down, halve them lengthwise and carefully scoop out the insides, leaving a thin shell. In a medium bowl, mash the potatoes using a potato masher or electric mixer on low speed until smooth. Gradually add milk in small increments, mixing well after each addition until the potatoes reach a smooth and fluffy consistency, adjusting the amount based on the type of potatoes used.
  • Incorporate butter, salt, and pepper into the potatoes and beat vigorously until light and fluffy. Fold in cheese and chives. Spoon the mashed potato mixture into the potato shells and arrange on an ungreased baking sheet.
  • Preheat oven to 400°F and bake for about 20 minutes or until hot.
