Twice-baked potatoes: creamy, flavorful, and guaranteed to please everyone at the table!
Ingredients:
  • 2 baking potatoes
  • 2 tablespoons butter, softened
  • 1 tablespoon milk
  • 1 (3 ounce) package cream cheese, cubed
  • 2 tablespoons sour cream
  • 1 pinch paprika, or to taste
Instructions:
  • Preheat your oven to a sizzling 450 degrees F (230 degrees C). Give your potatoes a thorough scrub and a gentle pat dry. Pierce them all over with a fork and elegantly arrange them on a baking sheet.
  • Cook the dish in the preheated oven until the potatoes are tender when pierced with a fork, for about 50 minutes to 1 hour. Take out from the oven and let it cool down a bit.
  • Lower the oven temperature to 350 degrees F (175 degrees C).
  • Cut a thin slice off the top of each potato. Scoop out the pulp and place it in a small bowl. Beat the potato flesh, butter, milk, and salt with an electric mixer in a large bowl until smooth and fluffy. Fold in the cream cheese and sour cream, then spoon the mixture into the potato shells. Sprinkle with paprika and set them on a baking sheet.
  • Bake in a hot oven until warmed through and tops are beautifully golden, about 20 to 25 minutes.
