Indulge in these creamy, guilt-free twice baked potatoes made with lighter sour cream and milk.
Ingredients:
  • 4 large baking potatoes
  • 8 slices bacon
  • 1 cup light sour cream
  • 0.5 cup nonfat milk
  • 0.5 teaspoon ground black pepper
  • 0.5 cup shredded Cheddar cheese
  • 4 green onions, sliced
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • Roast potatoes in a hot oven until fork-tender, approximately 1 hour. Let cool for 10 minutes before proceeding. Keep oven on.
  • Fry bacon in a big skillet over medium-high heat until crispy and browned all over. Once done, crumble the bacon and set it aside.
  • Halve the potatoes lengthwise and hollow out the flesh into a large bowl, keeping the skins intact. Combine the potato flesh with sour cream, milk, salt, pepper, 1/2 cup Cheddar cheese, and half of the green onions. Use a hand mixer to blend until smooth. Fill each potato skin with the creamy mixture. Garnish with the remaining 1/2 cup Cheddar cheese, sliced green onions, and bacon.
  • Bake until the filling is piping hot and the cheese is bubbly and gooey, approximately 15 minutes.
