Deliciously cheesy and bacon-filled side dish or appetizer.
Ingredients:
  • 4 large baking potatoes
  • 0.5 pound bacon
  • 4 tablespoons butter
  • 1 large onion, chopped
  • 0.5 cup chopped fresh mushrooms
  • 1 teaspoon crushed red pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon chopped fresh chives
  • 1 (8 ounce) container sour cream
  • 1 (8 ounce) package shredded Cheddar cheese
  • 1 teaspoon dry bread crumbs
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and generously pierce the potato skins with a fork.
  • Place the unwrapped potatoes in the preheated oven and bake for about 1 hour until they are soft.
  • In a large, deep skillet, sizzle the bacon over medium high heat until perfectly crispy. Once cooked, crumble it and set it aside.
  • Melt butter in a large saucepan over medium-low heat. Add onion, mushrooms, red pepper, garlic powder, pepper, chives, and salt. Cook slowly, stirring occasionally, until the onions are soft.
  • Scoop out the insides of the baked potatoes into a bowl, keep the skins intact. Add the onion mixture, sour cream, and half of the cheese. Mix until well blended.
  • Fill the potato skins generously with the mixture using a large spoon. Sprinkle with breadcrumbs, the rest of the cheese, and bacon on top.
  • Place the potatoes back in the oven and bake for an additional 15 minutes until the cheese is melted and the filling is lightly golden.
