Quick and flavorful twist on classic twice-baked potatoes, perfect for Thanksgiving or any feast.
Ingredients:
  • 3 pounds potatoes, peeled
  • butter-flavored cooking spray
  • 0.25 cup butter, or more if needed
  • 0.25 cup milk, or more as needed
  • salt and pepper to taste
  • 4 ounces sour cream
  • 1 cup shredded Cheddar cheese, divided
  • 0.25 pound bacon, cooked and crumbled
  • 1 tablespoon chopped fresh chives
Instructions:
  • In a large pot, simmer peeled potatoes until easily pierced with a fork, about 20 to 30 minutes.
  • Preheat the oven to 350°F (175°C) and generously coat a 3-quart casserole dish with butter spray.
  • In a large bowl, mash cooked potatoes using a potato masher. Pour in 1/4 cup of milk and season with salt and pepper to taste. Adjust consistency by adding more butter or milk as needed. Mix in sour cream and 1/2 cup of Cheddar cheese until well combined. Transfer the mixture to a casserole dish.
  • Bake in the preheated oven for 20 minutes until heated through. Sprinkle with remaining Cheddar cheese, crumbled bacon, and chives. Bake for another 5 minutes until cheese has melted.
