Bountiful Twice-Baked Potatoes

Satisfy your cravings with this delicious blend of mashed potatoes and yams, a unique twist on a classic dish.
Ingredients:
  • 6 large baking potatoes
  • 6 large yams
  • 1/3 to 1/2 cup milk
  • 1/3 cup butter or margarine, softened
  • 1/4 teaspoon pepper
  • 1/3 cup maple-flavored syrup
Instructions:
  • Preheat your oven to 350°F. Use a fork to pierce the baking potatoes and yams multiple times to release steam. Bake for 1 1/4 to 1 1/2 hours until they are tender.
  • Halve the baking potatoes lengthwise and scoop out the insides, leaving a thin shell. Mash the potatoes in a medium bowl until smooth. Gradually add milk while beating until desired texture is reached. Mix in 1/3 cup butter, salt, and pepper, beating until light and fluffy. Fill the potato shells with the mashed potatoes.
  • Peel the yams and mash them in a medium bowl. Mix in maple syrup and 1/3 cup of butter. Fill the remaining potato shells with the mashed yams.
  • Preheat oven to 400°F for immediate serving. Bake on a non-greased cookie sheet for approximately 20 minutes or until heated through. (For making in advance, refer to To Refrigerate or To Freeze below.)
  • Refrigerate the filled potatoes tightly covered for up to 48 hours. Prior to serving, preheat the oven to 400°F. Then, simply uncover and bake on an ungreased cookie sheet for approximately 30 minutes until heated through.
  • Freezing Instructions: Transfer the stuffed potatoes to a sealed airtight freezer container and remember to label it. Freeze for up to 2 months. When ready to serve, preheat the oven to 400°F. Bake the potatoes uncovered on an ungreased cookie sheet for about 40 minutes until heated through.
