Preserve your bountiful pear harvest in a spiced syrup for a delightful treat.
Ingredients:
  • 5-6 pounds Bartlett pears
  • 2 cups sugar
  • 2 quarts water
  • 2 star anise
  • 4 cardamom pods
  • 1 stick cinnamon
Instructions:
  • Prepare for canning: Choose a 12-quart pot for pint jars or a 16-quart pot for quart jars. Add a rack at the bottom to keep jars from touching the pan. Fill with hot water, ensuring jars are covered by at least 1 inch. Place on the stove to boil. Wash lids with hot, soapy water. Continue with the recipe as the water heats up.
  • Peel, core, and quarter the pears, then soak them in a bowl of cold water with lemon juice or citric acid to keep them from turning brown.
  • In a large pot, combine sugar, water, and spices and bring to a boil.
  • Add the pears to the boiling sugar water along with their lemon solution, allowing it to come to a boil again. Cook for 5 minutes.
  • Pack the canning jars with the pears, pouring the remaining syrup over them to cover. Wipe the jar rims with a paper towel, then seal with the lids and screw on the bands fingertip-tight.
  • Process in the water bath: Submerge the filled jars back into the water bath ensuring they are covered by at least 1 inch of water. Bring to a vigorous boil and process for 20 minutes. Take out of the water bath and place on a clean kitchen towel on the counter to cool.
