Homemade pear preserves with a zesty twist of fresh ginger, candied ginger, and lemon zest for a refreshing burst of flavor. Ideal for using up extra pears.
Ingredients:
  • 3 pounds pears - peeled, cored, and chopped
  • 4 cups white sugar
  • 0.5 cup chopped crystallized ginger
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons minced fresh ginger
  • 1 teaspoon lemon zest
Instructions:
  • In a large heavy pot, combine chopped pears, sugar, crystallized ginger, lemon juice, fresh ginger, and lemon zest. Let the mixture sit for 2 hours to allow the pears to release their juice. Cook over medium-high heat until thick and falling off a spoon, stirring often, for 45 minutes to 1 hour. The pears will turn translucent, and the preserves will darken.
  • Boil jars and lids for a minimum of 5 minutes to sterilize. Fill hot, sterilized jars with pear preserves, leaving 1/4 inch of space at the top. Remove air bubbles by running a knife or thin spatula inside the jars. Clean jar rims with a damp paper towel to remove any residue. Secure lids tightly.
  • Fill a large stockpot halfway with water and place a rack inside. Bring to a boil. Lower jars into the boiling water using a holder, ensuring a 2-inch space between them. Add more boiling water if needed to cover the jars by at least 1 inch. Cover the pot and process for 10 minutes in rolling boiling water.
  • Take out the jars from the stockpot and set them on a cloth-covered or wooden surface, spaced a few inches apart, to cool. After cooling, gently press the top of each lid with a finger to confirm a tight seal (lid remains stationary). Store in a cool, dark place.
