Spicy red pepper cauliflower pasta with creamy Parmesan sauce.
Ingredients:
  • 1 medium head cauliflower, broken into small florets
  • 0.5 cup salted butter
  • 1 medium onion, diced
  • 1 tablespoon red pepper flakes, or to taste
  • 2 pints heavy cream
  • 1 (16 ounce) package farfalle pasta
  • 1 (14.5 ounce) can diced tomatoes
  • 1 cup grated Parmesan cheese, or more to taste
Instructions:
  • Cook cauliflower in a pot of salted boiling water until tender, about 10 minutes. Strain cauliflower, saving the cooking water in the pot.
  • In a large skillet over medium-high heat, melt butter until sizzling. Cook onion until translucent, around 5 minutes. Add cauliflower florets and red pepper flakes; sauté until golden brown, 7 to 10 minutes.
  • Pour in the luxurious heavy cream and simmer until it's thickened by half, which should take around 10 to 15 minutes.
  • Bring the cauliflower cooking water back to a boil. Add the farfalle and cook for about 12 minutes until it is tender yet firm to the bite. Drain the farfalle.
  • Stir in tomatoes to the cauliflower sauce and heat through for about 1 minute. Sprinkle in 1 cup of Parmesan cheese and stir until melted, around 1 minute more.
  • Toss pasta with sauce until coated. Serve sprinkled with extra Parmesan cheese.
