Hidden veggie pasta for kids with secret cauliflower sauce!
Ingredients:
  • 1 cup frozen cauliflower
  • 1 1/3 cups hot water
  • 1 1/2 cups milk
  • 4 tablespoons butter or margarine
  • 1 box Chicken Helper™ crispy Parmesan chicken
  • 1 cup frozen sweet peas
  • 1 lb uncooked boneless skinless chicken breasts (thawed if frozen)
  • 1 tablespoon milk
  • 2 tablespoons vegetable oil
Instructions:
  • Prepare the frozen cauliflower according to package instructions. Transfer the cooked cauliflower to a food processor. Blend until smooth, making sure to scrape down the sides of the bowl as needed. Set aside.
  • In a 2-quart heavy saucepan, combine hot water, 1 1/2 cups milk, 2 tablespoons of butter, and the sauce mix with uncooked pasta from the Chicken Helper box. Bring to a gentle boil, stirring frequently. Simmer uncovered for about 10 minutes until pasta is tender. Stir in cauliflower and frozen peas, continue cooking for an additional 2 minutes. Keep warm before serving.
  • Slice each chicken breast at an angle into 3 to 5 pieces that are roughly 1/2 inch thick. Place the chicken in a medium bowl or a sealable plastic bag. Drizzle 1 tablespoon of milk over the chicken to moisten it, then add the seasoned crumbs from the Chicken Helper box and coat the chicken pieces thoroughly with the crumbs.
  • In a nonstick skillet, melt 2 tablespoons of butter with oil over medium heat. Add chicken and cook until golden brown on both sides over medium-low heat. Ensure chicken is cooked through and serve with pasta.
