Parmesan chicken strips with capsicum dip

Try these crispy parmesan chicken strips paired with a creamy capsicum dip for irresistible finger food.
Ingredients:
  • 4 eggs
  • 500.00 ml dried multigrain breadcrumbs
  • 85g parmesan cheese, coarsely grated
  • 3 tsp dried rosemary
  • 1kg chicken tenderloins, tendons removed, halved diagonally
  • olive oil cooking spray
  • 250g spreadable cream cheese
  • 270g jar chargrilled capsicum, drained
  • 1.30 gm Tabasco sauce
Instructions:
  • Preheat the oven to 200°C. Whisk the eggs with a fork in a shallow bowl and season with salt and pepper. In a large bowl, combine breadcrumbs, parmesan, and rosemary, tossing them together.
  • Coat each chicken piece in beaten egg and then seasoned breadcrumbs, ensuring crumbs stick by gently pressing with fingers.
  • Spread 2 baking trays with a light coat of oil. Bake until golden and fully cooked, about 30 minutes.
  • In a food processor, blend cream cheese, capsicum, and Tabasco until creamy. Transfer the mixture to a bowl and enjoy it warm with chicken strips.
