Whip up a quick Italian chicken skillet using leftover chicken in just 25 minutes!
Ingredients:
  • 1 tablespoon canola or vegetable oil
  • 2 cloves garlic, finely chopped
  • 2 cups marinara sauce
  • 2 cups water
  • 1 package (9 oz) refrigerated fettuccine
  • 1 bag (12 oz) frozen cut green beans, thawed
  • 2 cups cubed cooked chicken
  • 1/2 cup grated Parmesan cheese
Instructions:
  • Heat oil in a large skillet over medium heat. Add garlic and cook for about 30 seconds until softened. Stir in marinara sauce and water, then cover and bring to a boil over medium heat.
  • Add the fettuccine and green beans to the pot, stirring to separate the fettuccine. Bring back to a boil, cover, and cook for 3 to 5 minutes until the beans are tender.
  • Add the chicken to the mixture and cook for 3 to 4 minutes, stirring occasionally, until the chicken is heated through.
  • Take the pan off the heat, generously sprinkle with cheese, cover, and allow to sit for 2 minutes to melt the cheese.
