Creamy dill poached salmon with garden cress pasta.
Ingredients:
  • 1 (8 ounce) package spaghetti
  • 2 lemon, juiced
  • 0.5 pound salmon fillet
  • 1 tablespoon olive oil
  • 1 (8 ounce) package fresh green beans, trimmed and halved
  • 1 large shallot, minced
  • 0.25 cup sour cream
  • 1 bunch chopped fresh dill
  • 1 cup garden cress, or more to taste
Instructions:
  • Bring a pot of salted water to a rolling boil. Cook spaghetti until al dente, about 12 minutes, then drain.
  • As the pasta is boiling, fill a frying pan with enough water to cover the salmon. Stir in dill and strain in lemon juice. Season with salt and pepper. Place the salmon in the pan and gently poach over medium-high heat, flipping occasionally, until it flakes with a fork, approximately 10 minutes. Discard the skin when flipping for the first time.
  • Heat olive oil in a pan over medium to medium-high heat. Saute green beans and shallots until shallots are golden brown and green beans are tender, about 8 to 10 minutes.
  • After poaching the salmon, gently transfer it to a shallow bowl using tongs. Preserve the flavorful poaching liquid. Measure out 1/4 cup of the poaching liquid and transfer it to a saucepan. Combine it with sour cream and chopped dill, then stir over medium heat until well blended. Take the saucepan off the heat and fold the mixture into the pasta.
  • Serve the pasta on plates, topped with chunks of salmon, sauteed mixture, and a sprinkle of garden cress. Serve promptly for the best experience!
