Creamy salmon pasta with quick tomato sauce - ready in under 30 minutes for a fast and delicious weeknight meal.
Ingredients:
  • 1 (16 ounce) package spaghetti
  • 1 tablespoon vegetable oil
  • 10 ounces salmon fillet, cut into cubes
  • 1 clove garlic, minced
  • 1 pound tomatoes, chopped
  • 3 tablespoons chopped fresh basil
  • 1 pinch salt and freshly ground black pepper to taste
  • 0.75 cup heavy whipping cream
Instructions:
  • 1. Bring a large pot of salted water to a vigorous boil. Add spaghetti and cook until al dente, about 12 minutes. Drain well.
  • While the spaghetti is cooking, warm oil in a skillet over medium heat. Sear the salmon and garlic until the salmon is lightly browned, roughly 5 minutes. Next, stir in tomatoes and basil, then season with salt and pepper. Let it simmer for 3 minutes. Stir in cream and simmer over low heat until the flavors meld and the salmon is fully cooked, which should take about 10 minutes. Serve the sauce over the cooked pasta.
