Delicious and quick pasta with flavorful salmon - a perennial favorite!
Ingredients:
  • Zest and juice of 1 lemon
  • 80ml olive oil
  • 4 slices prosciutto, rind removed
  • 2 x 100g fillets of smoked salmon (whole fillets, not sliced)
  • 250g spaghetti
  • 150g pea
  • 40.00 ml chopped mint
Instructions:
  • Preheat your oven to 180°C.
  • In a bowl, combine lemon rind, juice, and oil. Season generously with sea salt and freshly ground black pepper. Lay the prosciutto on a baking tray and bake for 6-8 minutes until crispy and golden. Let it cool, then break into bite-sized pieces and set aside. Similarly, break the salmon into bite-sized pieces and set aside.
  • Boil the spaghetti in salted water, toss in the peas for the final 5 minutes. Keep some cooking water with the pasta. Combine with lemon mix, salmon, and prosciutto in the same pan. Toss and mix in the mint right before serving.
