Quick and creamy spaghetti made with just five ingredients, ready in minutes. Indulge in the luscious mascarpone sauce for a magical midweek meal.
Ingredients:
  • 1 lemon
  • 350g dried Italian Spaghetti
  • 250g carton mascarpone
  • 150g baby spinach
  • 150g smoked salmon slices, torn into large piece
Instructions:
  • Peel the lemon using a peeler to create wide strips of rind, then thinly slice them lengthwise into long, thin strips. Juice the lemon.
  • In a large saucepan, combine juice and 1.25L (5 cups) water. Cover and bring to a boil over medium-high heat. Stir in pasta and continue stirring until the water returns to a boil.
  • Lower the heat to medium. Cook, stirring occasionally, for 12 minutes or until the pasta is almost al dente. Stir in mascarpone and spinach. Cook for an additional 2 minutes until the pasta is al dente and the mascarpone is melted. Remove from heat and let sit for 2 minutes until the sauce thickens slightly.
  • Combine the citrus rind and salmon into the mixture. Season to taste and beautifully present.
