Simple smoked salmon spaghetti with just six ingredients.
Ingredients:
  • 350g spaghetti
  • 36.40 gm extra-virgin olive oil
  • 2 tsp finely grated lemon rind
  • 65.63 gm lemon juice
  • 40.00 ml baby capers, drained
  • 100g baby rocket
  • 220g smoked salmon, chopped
Instructions:
  • Boil pasta in salted water according to package directions until tender. Save 2 tablespoons of cooking liquid. Put pasta back in the pan.
  • Combine the reserved cooking liquid, oil, lemon rind, lemon juice, capers, rocket, and salmon with the pasta. Season generously with pepper.
  • Cook over low heat, tossing gently for 1 to 2 minutes until heated through and rocket begins to wilt. Serve.
