Spaghetti with fried capers and smoked salmon

Elevate pasta with smoked salmon, capers, and lemon thyme for a gourmet experience.
Ingredients:
  • 500g spaghetti
  • 100g (1/2 cup) drained capers
  • 125mls (1/2 cup) vegetable oil, for frying
  • 1 red onion, thinly sliced
  • 200g thinly sliced smoked salmon, cut into 2cm-wide strips
  • 20.00 ml fresh lemon thyme leaves
  • Extra virgin olive oil, to serve
Instructions:
  • Cook the spaghetti in a pot of generously salted boiling water according to package instructions until it is cooked to perfection ("al dente").
  • Rinse the capers under cold running water and pat dry. Heat vegetable oil in a saucepan over medium heat. Fry capers in batches for 30-60 seconds until they open and lightly brown. Drain on paper towel.
  • In a large deep frying pan over medium heat, sauté the red onion in olive oil for 5 minutes until soft. Add garlic and sauté for 1 more minute. Stir in cooked pasta, capers, smoked salmon, lemon thyme, black pepper, and toss gently for 1 minute. Drizzle with extra virgin olive oil before serving.
