Nutritious asparagus and pasta topped with crispy fried eggs for a comforting winter meal.
Ingredients:
  • 300g thin asparagus
  • 1 small onion, finely chopped
  • 2 garlic cloves, crushed
  • 100.00 ml chopped fresh herbs (such as thyme, parsley and chives)
  • 125g unsalted butter, plus 1 tbsp extra
  • 23.40 gm wholegrain mustard
  • 42.00 gm lemon juice
  • 27.30 gm extra virgin olive oil
  • 100g fresh breadcrumbs
  • 300g spaghetti
Instructions:
  • Boil the asparagus briefly in hot water for 2 minutes, then cool it in cold water, drain, cut in half if large, and set aside.
  • In a bowl, mix together onion, half of the garlic, 3 tablespoons of herbs, butter, and mustard. Add lemon juice, salt, and pepper. Set the mixture aside.
  • In a non-stick frying pan, heat oil and extra butter. Add breadcrumbs and cook over medium heat for 5 minutes, stirring constantly until golden. Stir in the rest of the garlic and herbs, then set aside.
  • 1. Boil the pasta in salted water until al dente. Drain it. Mix in the mustard butter, followed by the asparagus and half of the crumb mixture. 2. Fry the eggs and serve them on top of the pasta. Sprinkle the remaining crumb mixture as garnish.
