Zesty spring pasta

Brighten up your day with a refreshing asparagus and sweet pea pasta dish.
Ingredients:
  • 500g spaghetti
  • 1 bunch fresh asparagus, trimmed and halved
  • 250.00 ml frozen peas
  • 2 cloves garlic, chopped
  • 113.75 gm olive oil
  • 1 onion, finely sliced
  • Zest and juice of 1 lemon
  • Shaved parmesan, to serve
Instructions:
  • Prepare spaghetti following the package directions. Quickly blanch asparagus and peas in boiling water for 1 minute, then refresh in cold water and set aside.
  • In a skillet over medium heat, cook garlic and onion in a splash of olive oil until translucent. Add vegetables and stir-fry for 2 minutes. Mix in cooked spaghetti, the rest of the olive oil, and lemon juice, then toss to combine.
  • Sprinkle with Parmesan cheese and lemon zest on top.
