Whip up a simple and delicious pasta dish with minimal ingredients for a quick and tasty meal.
Ingredients:
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 300ml thickened cream
  • 50g parmesan
  • 400g gnocchi sardi (or other short pasta - see note)
  • 240g pea
  • 40.00 ml finely chopped mint leaves, plus extra leaves to serve
  • 4 slices prosciutto, torn
Instructions:
  • 1. Heat oil in a saucepan over medium heat. Saute onion and garlic until onion is soft, about 6-8 minutes. Pour in cream, season with salt and pepper, and heat until almost boiling. Reduce heat to medium-low and cook until thickened, about 3-5 minutes. Stir in parmesan cheese and remove from heat.
  • Cook the pasta in boiling salted water according to the packet instructions until it is al dente. Save about 1/2 cup (125ml) of the cooking water before draining the pasta.
  • Cook peas in boiling salted water for 2 minutes until tender. Drain, then mash half the peas with a fork until chunky. Combine chopped mint, mashed peas, and whole peas with pasta. Mix in the cream mixture, and add a splash of reserved cooking water for desired consistency.
  • Serve the pasta in individual bowls, and garnish each with prosciutto, extra Parmesan, fresh mint leaves, and a sprinkle of freshly ground black pepper.
