Elevate entertaining with this elegant bruschetta featuring peas, creamy cottage cheese, and refreshing mint on grilled Italian bread.
Ingredients:
  • 250.00 ml frozen peas
  • 40.00 ml cottage cheese
  • 1 garlic clove, crushed
  • 2 tsp fresh mint leaves, finely chopped, plus extra whole sprigs to serve
  • 36.40 gm extra virgin olive oil, plus extra to serve
  • 8 thin slices crusty Italian bread
  • 2 radishes, thinly sliced
Instructions:
  • Boil peas in a saucepan for 2 minutes until tender, then drain and transfer to a bowl. Mix in cottage cheese, garlic, mint, and 2 teaspoons of oil. Use a stick blender to blend until almost smooth. Season with salt and pepper and let it cool.
  • Preheat the grill to high while placing the bread in a single layer on a large baking tray. Brush both sides with the remaining oil and grill for 2 minutes per side until toasted.
  • Spread the pea mixture on the toasts, then add radish slices and fresh mint leaves. Season with salt and pepper, and drizzle with extra oil before serving.
