Asparagus, Snow Pea, and Radish Salad

Spring vegetable salad with zesty lime dressing.
Ingredients:
  • 1.25 pounds asparagus, trimmed and cut diagonally into 1-inch pieces
  • 0.5 pound snow peas, ends and strings removed, cut diagonally into 1-inch pieces
  • 15 small radishes, trimmed and thinly sliced
  • 3 scallions, thinly sliced
  • 0.25 cup fresh snipped dill
  • 3 tablespoons canola oil
  • 1 teaspoon white sugar
  • 0.75 teaspoon salt
  • 0.25 teaspoon freshly ground black pepper
  • 3 tablespoons freshly squeezed lime juice, or more to taste
Instructions:
  • 1. Bring a pot of water to a rolling boil. Quickly blanch the asparagus for 1 minute, then add the snow peas and boil for another minute. Drain and gently pat dry with paper towels.
  • Combine asparagus and snow peas in a large bowl. Add radishes, scallions, and dill, gently toss to mix the salad.
  • Combine oil, sugar, salt, and pepper in a small bowl and whisk until well blended. Pour the dressing over the salad, tossing until evenly coated. Let it sit at room temperature for about 1 hour to enhance flavors. Just before serving, drizzle lime juice over the salad and gently toss to combine.
