Cucumber, radish and snow pea salad

Create a refreshing summer salad as the perfect side dish.
Ingredients:
  • 4 Lebanese cucumbers
  • 1 bunch radishes, washed, trimmed
  • 250.00 ml mint leaves
  • 150g snow peas, thinly sliced diagonally
  • 50g snow pea sprouts, trimmed
  • 65.63 gm lime juice
  • 18.20 gm olive oil
Instructions:
  • Peel cucumbers lengthwise into long thin ribbons using a vegetable peeler, removing excess seeds. Place ribbons in a bowl. Slice radishes into rounds and then cut into thin strips. Add radishes to the bowl with cucumber, mint, snow peas, and sprouts. Cover and refrigerate until needed.
  • In a jug, mix lime juice, oil, salt, and pepper. Whisk together. Just before serving, drizzle the dressing over the salad and toss until well combined. Serve immediately.
