Vietnamese Pickled Daikon Radish and Carrots

Upgrade your banh mi with crunchy pickled veggies of daikon, carrots, cucumber, and onions.
Ingredients:
  • 4 cups warm water
  • 0.75 cup rice vinegar
  • 3 tablespoons sugar
  • 2 tablespoons salt
  • 0.5 pound carrots, julienned
  • 0.5 pound daikon radish, julienned
Instructions:
  • In a bowl, mix together water, vinegar, sugar, and salt until the sugar and salt have fully dissolved.
  • 1. Fill a sterilized jar with carrots and daikon. 2. Pour the vinegar mixture over the vegetables until they are fully submerged. 3. Seal the jar tightly and refrigerate for a minimum of 1 day, preferably 3 days.
