A classic bánh mì sandwich with pork, pickles and fiery flavors, served in a crispy baguette - perfect for sharing.
Ingredients:
  • For the dồ chua
  • 1/4 cup white vinegar
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1/4 cup shredded carrots
  • 1/4 cup shredded daikon
  • For the pork
  • 2 tablespoons minced lemongrass
  • 1 shallot, minced
  • 1 tablespoon sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon freshly ground black pepper
  • 10 ounces pork tenderloin, thinly sliced
  • 1 tablespoon vegetable oil
  • For the sandwich
  • 1 (12-inch) French baguette
  • 1/4 cup mayonnaise
  • Maggi Seasoning, to taste
  • 1/4 cup pâté (optional)
  • 1 jalapeño, thinly sliced
  • 6 to 8 sprigs cilantro, tender stems intact
Instructions:
  • Prepare the dồ chua: Mix vinegar, sugar, and salt in a bowl until completely dissolved. Add carrots and daikon and marinate for at least 30 minutes. For enhanced flavor, refrigerate overnight. Store in the fridge for up to 4 weeks.
  • Enhance the pork with flavor: Mix lemongrass, garlic, shallot, sugar, soy sauce, fish sauce, and black pepper in a bowl. Add thinly sliced pork tenderloin and coat well. Marinate for 15 minutes or overnight in the fridge.
  • Heat your oven to 325°F.
  • Sear the marinated pork in a hot skillet until cooked through and slightly charred, about 5 minutes each batch. Be prepared for some smoky goodness by ventilating your kitchen!
  • Prepare the baguette: Slice it in half lengthwise, opening it up like a book on a baking sheet. Toast in the oven for 5 to 7 minutes until golden brown. Let it cool completely.
  • Prepare the sandwich: Once the bread has cooled, hollow out some of the bread to make space for the filling. Apply mayonnaise to both sides, then sprinkle with 2 to 3 dashes of Maggi Seasoning. Spread the pâté on the bottom half. Layer with cooked pork, drained do chua, jalapeños, and cilantro.
