Add these zesty Asian pickled vegetables to salads and sandwiches for extra flavor!
Ingredients:
  • 0.5 cup distilled white vinegar
  • 0.25 cup white sugar
  • 1 small carrot, peeled and cut into matchsticks
  • 1 daikon radish, peeled and cut into matchsticks
  • 2 tablespoons chopped fresh cilantro
  • 1 Thai chile pepper, seeded and chopped
Instructions:
  • In a saucepan, gently warm vinegar and sugar until sugar dissolves. Remove from heat and chill. Combine daikon, carrot, cilantro, and chile peppers in a jar. Pour the chilled vinegar mixture over the veggies, ensuring they are submerged. Cover and refrigerate for at least 4 hours or overnight.
