Overnight Chinese Daikon Radish Pickles

Enjoy these delicious pickles in just 24 hours.
Ingredients:
  • 1.5 cups chopped daikon
  • 0.75 teaspoon salt
  • 1 tablespoon rice vinegar
  • 0.25 teaspoon sesame oil
Instructions:
  • Combine daikon and salt in a mixing bowl, cover, and refrigerate until it releases 1 to 2 tablespoons of water, approximately 30 minutes.
  • After draining and rinsing the daikon to remove excess salt, gently pat it dry with a paper towel. Place it back in the bowl and mix in the rice vinegar, black pepper, and a touch of sesame oil for extra flavor. Cover the bowl and let it chill in the refrigerator for at least 8 hours before serving.
