Whip up a budget-friendly version of your favorite Chinese takeout with this easy drunken chicken recipe. Marinate chicken for 2 hours, refrigerate overnight, and come home to a delicious meal the next day.
Ingredients:
  • 2l chicken
  • 40g ginger, sliced
  • 3 green shallots, cut into 10cm pieces, plus extra 1/4 cup thinly sliced, to serve
  • 7.20 gm sea salt flakes
  • 1.2kg whole chicken
  • 40.00 ml goji berries
  • 310ml (1 1/4 cups) Chinese rice wine
  • 18.00 gm sugar
  • 1/2 tsp ground white pepper
Instructions:
  • In a large saucepan, combine stock, ginger, shallot, and half of the salt. Bring to a boil over high heat.
  • Add tender chicken pieces and nutrient-rich goji berries to the pot and bring to a vigorous boil. Simmer gently for 5 minutes. Turn off the heat, cover the pot, and allow the flavors to mingle for 2 hours until the chicken is cooked through, making the most of the residual heat to perfectly cook the chicken to tender perfection.
  • Divide the cooked chicken into 8 portions, including 2 wings, 2 breasts, 2 thighs, and 2 legs. Remove the breast meat from the bones.
  • Incorporate 1 1/2 cups of stock mixture (with goji berries, ginger, and shallot) with rice wine, sugar, pepper, and the rest of the salt in a sizeable glass or ceramic bowl until the sugar dissolves. Introduce chicken to the mixture, cover, refrigerate overnight, and remove any leftover stock mixture.
  • Slice the chicken breasts, then serve them with the remaining chicken pieces, drizzled with the rice wine mixture and garnished with extra shallot.
