Savory red wine quinoa with garlic and chicken broth - a versatile and flavorful side dish.
Ingredients:
  • 1 teaspoon olive oil
  • 2 to 3 cloves garlic, finely chopped
  • 1 cup uncooked quinoa, rinsed
  • 1 cup Progresso™ chicken broth (from 32-oz carton)
  • 1 cup good-quality red wine
  • Salt and pepper to taste
  • Finely chopped fresh chives, if desired
Instructions:
  • Heat oil in a 3-quart saucepan over medium heat. Cook and stir garlic for about 1 minute until softened.
  • Combine quinoa with chicken broth and wine in a pot. Bring to a boil over medium heat, then lower heat, cover, and simmer for 20 to 25 minutes until quinoa is tender and liquid is absorbed.
  • Take the saucepan off the heat. Season the quinoa generously with salt and pepper, then sprinkle chives on top. Serve promptly.
