Overnight marinated mushrooms in lemony thyme-infused olive oil, served warm with crusty bread.
Ingredients:
  • 1 cup water
  • 1.5 pounds fresh mushrooms, stems removed
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 3 tablespoons fresh lemon juice
  • 3 teaspoons minced garlic
  • 0.5 teaspoon ground black pepper
  • 3 tablespoons dried parsley
  • 0.125 teaspoon onion powder
Instructions:
  • Bring a pot of water to a vigorous boil. Add mushrooms and let them gently simmer for 10 minutes. Remove from heat and drain the mushrooms.
  • Combine olive oil, thyme, salt, lemon juice, garlic, pepper, parsley, and onion powder in a large bowl. Toss in mushrooms until coated. Refrigerate overnight to marinate. Reheat before serving.
