Vegan grain salad with marinated mushrooms - simple and delicious!
Ingredients:
  • 400g cup mushrooms, sliced
  • 60ml olive oil
  • 82.50 ml finely chopped flat-leaf parsley
  • 54.00 gm maple syrup
  • 42.00 gm soy sauce
  • 3 tsp sesame oil
  • 3 tsp finely grated ginger
  • 250g pkt ancient grains microwavable rice
  • 100g baby spinach leaves
Instructions:
  • In a large bowl, combine mushrooms with olive oil, parsley, vinegar, and garlic. Mix well and season to taste. Cover and set aside for 2 hours, stirring occasionally to let the flavors develop.
  • In a screw-top jar, mix maple syrup, soy sauce, sesame oil, and ginger. Shake vigorously until well combined.
  • Cook the rice according to the package instructions. Mix the rice with the mushrooms and spinach in a bowl, combining well. Transfer the mixture to a serving dish and top with dressing before serving.
