Delicious marinated Italian mushrooms - ideal for antipasto. Quick and simple prep, ideal for entertaining. Marinate for minimum 5 hours before serving.
Ingredients:
  • 1 pound small mushrooms, stemmed
  • 4 tablespoons extra-virgin olive oil
  • 3 tablespoons white wine vinegar
  • 0.5 red onion, finely chopped
  • 2 tablespoons finely chopped fresh oregano
  • 2 tablespoons finely chopped fresh thyme
  • 2 cloves garlic cloves, pressed
  • 0.5 teaspoon freshly ground black pepper
Instructions:
  • Place a large pot of gently salted water on the stove and let it come to a boil. Add mushrooms and simmer until tender, approximately 10 minutes. Drain and allow them to cool before using.
  • In a large jar with a lid, shake together olive oil, white wine vinegar, red onion, oregano, thyme, garlic, salt, and pepper until well mixed. Add cooked mushrooms, refrigerate for at least 5 hours. Before serving, let it sit out at room temperature for 10 minutes.
