Celery, radish and cucumber with orange dressing

Summer crunch salad: Fresh and vibrant veggies in a refreshing dish.
Ingredients:
  • 2 bunches celery, leaves trimmed, coarsely chopped
  • 1 bunch radishes, washed, stems and roots trimmed, halved, thinly sliced
  • 6 Lebanese cucumbers, halved lengthways, coarsely chopped
  • 2 carrots, peeled
  • 250.00 ml loosely packed fresh mint leaves
  • 185ml (3/4 cup) fresh orange juice
  • 55g (1/4 cup) caster sugar
  • 3 tsp apple cider vinegar
  • Salt & freshly ground black pepper
Instructions:
  • Combine the celery, radish, cucumber in a large bowl. Create thin carrot ribbons with a vegetable peeler. Cut the ribbons into matchsticks. Mix the carrots and mint leaves into the celery mix, gently toss to combine.
  • In a small saucepan, mix the orange juice and sugar and bring to a lively boil over medium heat. Lower heat and let it simmer for 7 minutes until the orange juice mixture reduces by two-thirds. Remove from heat and allow to cool slightly for 5 minutes.
  • Combine olive oil and vinegar with the orange syrup and mix until well blended. Season with salt and pepper to taste.
  • Coat the celery, radish, and cucumber with the citrusy orange dressing and gently mix together.
